    An easy way to make pinto beans is to emulate Tuscan style "fagioli al fiasco" but cooking them in a pot on a stovetop rather than the traditional bottle next to the fireplace. Soak beans 12-24 hrs in lightly salted water, when soaked then discard water, put in pot, cover with water, add a few crushed cloves garlic, a few sprigs rosemary, oil (olive or rapeseed are fine) and cook on low fire until the beans bloat up and start bursting. Serve with more oil and fresh bread.
